As the Year of the Rabbit draws to a close, Chinese people around the world are preparing to welcome the Year of the Water Dragon, which many believe promises to bring wealth, prosperity and longevity.

In Jakarta, many Chinese restaurants will celebrate the holiday, which falls on Monday, with special menus, with most including the well-known Prosperity Toss, or yee sang, a kind of raw fish salad.

We take a look at some of the restaurants putting on special spreads for those welcoming the Water Dragon.

JW Marriott, JakartaSailendra Restaurant

The festivities start with the Chinese New Year’s Eve celebration, featuring the traditional yee sang. This is a raw fish salad mixed with shredded fresh and pickled vegetables, plum sauce, ground peanuts and sesame seeds.

A symbol of prosperity, the dish is usually served to a group of people who will do the tossing using chopsticks. It is believed that the higher the toss, the merrier the year ahead.

Pearl Chinese Restaurant

Pearl is preparing traditional Cantonese cuisine to welcome the arrival the Year of the Dragon in a contemporary setting. Once again, the iconic yee sang marks an important part of the menu.

The restaurant will also have Nian Gao rice cakes, known in Indonesia as kue keranjang, available for the season.

To celebrate the Chinese New Year, Shanghai Blue 1920 is preparing a special package of nine different types and colors of pao (bakpao), a type of steamed dumpling.

Hotel Indonesia Kempinski, JakartaSignatures Restaurant

No matter how Chinese people choose to celebrate the coming of the New Year, prosperity is always among their wishes for the coming year. One Chinese New Year tradition is pun choy, which is literally translated as a basin filled with food, prepared as a massive meal for community gatherings.

At Signatures, prosperity treasure pots will be prepared by Chef Foong Wai Long, with the choice of an Emperor Treasure Pot (pork, seafood, chicken and vegetables), Royal Seafood Treasure Pot (seafood) and New Year’s Dragon Treasure Pot (mix of fish, duck and chicken).
